Sausage Rolls


Hum rahe ya na rahe kal,
pal, yaad aayenge ye pal...

My friends have presented me with some of the most beautiful and craziest moments of my life. As life takes on a quick pace, the memories of laughing together, dividing a tiny piece of chocolate into 9 tiny bits, gossiping about who is with whom, lengthy discussions that wound into the night regarding the facts of life , cussing at each other,  failed attempts to get our hands on the 'Murder' CD that made its rounds in hostel, shopping for jewellery and clothes, the surprise birthday parties, helping each other find the right shade of lipstick, are some of the few things that bring a smile to my face. Wouldn't it be just wonderful if we could get together once more, spend a day without anything to worry us, be totally and absolutely happy and carefree?

If there ever be such an occasion, I'll make these sausage rolls
, because whats a get together without lots of food for us food lovers? What will you make?

Spicy Sausage Rolls
To a group of girls who cried themselves silly during the farewell party for their seniors in college, as it hit them that they would also have to bid each other good bye within a short year's time. To friendship, to us.

(I saw absolutely delicious looking rolls here and I just had to make them. The rolls I made look nowhere as good, but they were quite delicious.)

300 grams plain flour (maida)+extra for dusting
2 teaspoons active dry yeast+1/4 cup warm water+1 teaspoon sugar
1 teaspoon salt+a little extra
30 grams butter, at room temperature
1 egg+1/2 cup milk
1/2 onion+1/2 capsicum+1 green chili, chopped+1/2 teaspoon dried red chili flakes
8 tablespoons tomato sauce+1 cup cheddar cheese, grated
8 chicken sausages 
1 egg white + 2 teaspoons water, for egg wash 

Mix together water, yeast and sugar, till the yeast is completely dissolved. Cover and stand in a warm place till the mixture is frothy.

Sift flour and salt into a large bowl. Stir in the yeast mixture. Beat egg and milk lightly, and combine with the flour. Knead dough for about 5 minutes, so that it becomes elastic. Add butter, and continue kneading till the dough is soft and smooth, for around 10 minutes.

Cube the onion and separate the rings. Chop the capsicum into small cubes. Sprinkle some salt all over, and mix. Add the capsicum, onion, green chilies, red chili flakes to the dough, and knead well once more so that everything is combined well.

Cover the dough with a damp towel, and let it rest in a warm place for an hour or so, till the dough has doubled in size.

Divide the dough into 8 parts, cover with a damp clothe and let it rest for 10 more minutes. 

Dust the kneading surface with a little flour. Roll each portion of dough into a cylinder that is around 40 cm long, or according to the length of the sausage. Apply one tablespoon of tomato sauce on the side of the dough facing you, and sprinkle cheese all over. Roll to enclose the sausage, such that the cheese and sausage is within the roll, with the end of the roll facing down. Cover the rolls and let it rest for another 10 minutes.

Grease the baking tray. Apply egg wash over the rolls. Place them on the tray and bake for 20-25 minutes at 200°C till the rolls become brown.
